My friend JillyÂ loves to cook. She posts her food photos on Facebook and such. Usually, when people do this I am like, “NobodyÂ cares about your hot dog, fella,” but Jilly’s posts make me want to stop by her houseÂ Ã la Steve Urkel style.
Come running in uninvited, trip over the rug and land face first in the most delicious looking pizza one has ever instagrammed.Â “Did I dooo thaaat?”

When she told me she was making a girl scout cookie cheesecake I wanted to smash my head Â through the computer screen. I was inspired. The thought of thin mints lead me to various minty, green thoughts. I combined Girl Scout cookies with a popular Saint Patrick’s Day favorite; the Shamrock Shake. The ONLY thing that should motivate a person to walk into a McDonald’s ever.

Shamrock Shake Shooters in Thin Mint Shot Glasses
– 3 T butter, melted
– 24 thin mint cookies
– 1 cup vanilla bean ice cream
–Pure mint extract (Not imitation! The real stuff, people.)
-2 T heavy cream
Yields: About four tall shot glasses (varies)
…Oh, did you know you can add a little booze? Yes.
You will need some thin mints. I struggled with this, since most establishments I frequent don’t allow kids.
Jilly, the saucy little minx that she is, whispered in my ear that you can find imitations at the grocery store.
This is not a joke or for dramatic effect. I ate TWO entire packages. Dope!
Upon consumption I ran into the shower and scrubbed my skin clean whilst crying for about an hour.
Take 24 cookies and use your handy food processor to pulverize.
It’s veryÂ therapeuticÂ to pulverizeÂ things. Especially after you’ve eaten two packages of cookies.
Melt the butter and pulse through cookie crumbs until combined.
Line shot glasses with strips of plastic wrap so that it is completely covered inside. You also want the wrap to protrude over the edge. You’ll see….
Fill glass shot with cookie mixture. Pat all around and make certain everything is covered. You don’t want any holes in your cookie shot glasses!
Did you know you can make a milkshake in your food processor?
Place ice cream, heavy cream, and a dab of mint extract or oil in processor. Dab a touch of green food coloring. Pulse a couple of times untilÂ justÂ mixed. If you want to add a little liquor only add a touch. Otherwise it will be too runny. Booze+ thin mints + milkshake = love.
Pour into shot glasses. Freeze, then when ready to serve pull on protruding plastic wrap to free cookie shooters from glasses.
-Â You are welcome to release the cookie shooters from the glasses, pour in milkshake and serve right away without freezing again. Proceed with caution if you choose this route.
-Â Shorter shot glasses are less difficult to work with than tall shooterÂ glassesÂ You will be able to line with plastic wrap and Â fill with cookie with ease.
–Â If you still prefer tall shooter glasses, use something long to press plastic wrap and then the cookie mixture into bottom of Â glass. It’s a bit tough to reach.
–If the cookie shooter does not result in a smooth, flat bottom don’t fret. Save the extra cookie leftover from filling glasses. After removing shooters from glass, if they don’t stand up straight, then microwave cookie mix and pat a little on bottom to level out.Â
Oh, you can cut a straw and place on top.
Don’t forget to sprinkle a little disco dust on as well.
Dope! Saint Patrick’s Day!
Proceed to mentally prepare yourself for uninvited guests, because once they catch wind of these Shamrock Shake Shooters it’s all over.
Now do the Urkel.
Don’t even get me started with the Carlton.
