Mojito Popsicle Diamond Ring Pops
Every holiday season, I try my best to get friends and family unique gifts. This is no easy task, so Uncommon Goods has always been a great go-to.
You can imagine my excitement over teaming up with this integrity-based company. With summer just around the corner I was pretty excited to try out their popsicle diamond ring pop kit. More tasty, and affordable than the real deal. Not to mention, no commitment ahem.
The even better part is that Uncommon Goods conducts harm-free practices towards animals and people and 1/3 of their inventory is recycled or upcycled material. They never pay even seasonal employees less than 50% above the minimum wage. How cool is that?

Ingredients for Mojito Popsicle Diamond Ring Pops

About 20 mint leaves (You can use the Herb and Pot Snip Set to grow your own!)
1/2 cup water
1/4 cup sugar
1 + 1/4 cup white rum
3/4 cup flattened club soda
1/4 cup fresh lime juice

Begin your mojito popsicle diamond ring pops by preparing your club soda. Pour into a glass and leave out until it is flat.
Boil 1 cup of white rum. Set on high. Once it begins to boil, put timer on for two minutes. After two minutes are up remove from heat and pour into a bowl. A
Next, you will prepare a simple syrup. Simmer water and sugar on low to dissolve sugar.
Add mint leaves and bring to boil for about 2 minutes, then lower to simmer again for 5 min. Remove from heat and strain leaves.
Once simple syrup is cooled, stir in cooled prepared rum, another 1/4 cup of regular rum (that has not been boiled), flat club soda, and lime juice.
Pour into your popsicle diamond ring pop molds and freeze.
Remove, once frozen, pat dry and quickly use a food paint brush to brush with luster dust.
Diamonds are a girl’s (or dude’s) best friend. Especially when they’re made of mojito and shimmer.

Make these for summertime, princess parties, bachelorette parties, any party, Valentine’s Day… I’m fabulous and I simply feel like it day… Pretty much just enjoy these, but place in a cool-ass wine glass in case they melt. So you can sip the rest.
