Tomato Mozzarella Cups. The Ultimate Portable Appetizer.

You crazy people have been nagging me for healthier recipes for  quite some time so here it is. Shut up already! I’ve mentioned an infinity times before how resolutions are fake goals for people who can’t make lifestyle adjustments. So don’t just take this as a resolution recipe. This is a recipe or ALLL TIMEZZZZZ.

Reasons why my tomato mozzarella cups need to be made now:

1. A lighter way of indulging. You get to eat cheese, but not melted-brie-on-a-burger-with-more-cheese-on-the-side (oh and cheese on my fries), kind of cheese.

2. This takes about 10 minutes to prep. You can also make it ahead of time. Now when you entertain you can leave the kitchen and get wasted on wine.

3. They are in friggin’ edible cups. Portable, so you can also thank me for that.

4. If you use good quality ingredients this is so fresh and so clean, clean.

 

Since I don’t believe in diets, you may not want to invite me to your party. I will eat my tomato mozzarella cup in five seconds, then pick out all of the mozzarella balls from everyone else’s cups. I like cheese.

 

Here’s to a healthy new year!

 

Ingredients for Tomato Mozzarella Cups. The Ultimate Portable Appetizer.

Large tomatoes
Mozzarella balls
– Cherry tomatoes
– Olive oil
Salt and pepper
Basil leaves
– Optional: mixed herbs
– Optional: balsamic Vinegar


 

Use a small knife to cut the tops off of large tomatoes. Cut along the inside rim, careful not to slice a hole through the outside skin.

Use a spoon to scoop out inside pulp. Set tomato cups to the side.

Mix cherry tomatoes, mozzarella balls, olive oil, salt and pepper, and if you like, some chopped herbs. Spoon into tomato cups. Garnish with a basil leaf.

Now wasn’t that easy? Totally painless. Sort of defeats the whole, no pain no gain thing.
