New York Everything Bagel Pizza with Cream Cheese Sauce. And Lox. Lot’s of it.

I have been dreaming of making this pizza for months. I miss bagels. Good ones. You know, the fluffy ones, with way too much cream cheese slathered on top. You bite down and the cream cheese squishes out the sides. We must consider the other toppings lest we allow this food fantasy fall short. The lox. That’s a smoky, cured salmon that rocks. The onion and tomato sort of tie it all together like a neat, little bow.

 

I’ve now been in Texas for a little over 1 1/2 years , and there are certainly some things I miss. Bagels.

 

One afternoon I was starving and suddenly craving a bagel. The only privately owned bagel place is on the other side of town, sadly to discover after Googling up a storm on my phone.

 

I broke down, went to Einstein’s Bagels, and ate a shoddy bagel with cream cheese and lox while staring at patrons walking into 24 Fitness.

A low moment, but I held onto it nonetheless.

 

I vowed to myself that one day I would make a meal that involved all of the wonderful components of a New York bagel (without the New York water). This is a pizza, but with bagel bread as the crust. It is covered in garlic, salt and onion, just like an everything bagel. Smother that with some luscious cream cheese white sauce, and top with smokey lox, onions, tomatoes, and capers. You can also add or withhold whatever toppings you like.

 

Here’s What you Need for Your New York Everything Bagel Pizza with Cream Cheese Sauce. And Lox. Lot’s of it. 

 Sponge:

2 cups bread flour

– 1 1/4 cup water

– 1/2 teaspoon instant yeast

 

Dough:

1/4 teaspoon instant yeast

1 3/4 cups bread flour

– 1 1/2 teaspoon Kosher salt

– 1 1/2 teaspoon brown sugar

Baking soda

 

Sauce:

– 3 Tablespoons butter

–  4.5 Tablespoons flour (all-purpose)

– 1 1/2 cups milk

1 teaspoon salt (or to taste)

Pepper (to taste)

– 3 garlic cloves (or more, if you really, really, like garlic….Vampire murderer)

3/4 cup parmesan cheese

– 15 ounces cream cheese

 

Toppings:

– 1 egg

Dried garlic

Kosher salt

– Dried onion

– Poppy seeds

– Lox (cured salmon)

– Red onions

Capers

Tomatoes

– Cornmeal

 

 

 

For the sponge:

Stir all sponge ingredients together in a bowl. Cover bowl and let stand in warmest part of house for about 3 hours or more.

 

I stored mine in the laundry room on top of the dryer while laundry was drying. It should be sitting in a warm room temperature. Not too cold, also not very hot.

This is what my sponge turned into after several hours. It should rise and form air bubbles.

 

For the dough:

Next, scrape sponge into a stand mixer. Add the dough ingredients. Turn on medium and knead for 10 minutes.

 

As you can see I did not use my dough attachment. Couldn’t find it. Everything still worked out okay. Once well kneaded, remove from bowl and hand knead a bit just to make sure everything is combined.

Place back in bowl  (that has been greased with olive oil), cover, and allow to sit in warm room temp for about 3 hours or more. Until it has risen again, basically.

 

 

Roll out into crust shape, then turn while holding edges to stretch it out. Let it sit to soften and rise again. How long is up to you, but I was super afraid of it not rising properly into a bagel puff so I just let it sit covered for a few hours, then placed in the fridge overnight.

 

Remove from fridge (if you need to) and allow to sit until it reaches room temperature.  Make sauce by melting butter on medium low, then adding flour until well combined. Slowly whisk in milk, then season with salt, pepper, and minced garlic. Continue stirring until it begins to thicken. Add in parmesan cheese and whisk until melted, then add in cream cheese and whisk until dissolved. Sauce should be thick and creamy, but not rubbery.

 

Find a large, wide pan that can fit your bagel pizza dough. Fill it 3/4 with water and set to high. Once boiling, add baking soda and carefully lay dough into water. Boil on one side for about a minute, then the other side for the same. Flipping it can be tricky. I used a screen splatter and tongs. Set on cloth kitchen towels to dry a little.

Now for putting pizza together. Set oven to 425 degrees. Brush with egg wash (whisked egg with a splash of water), then sprinkle dried onion, garlic, salt, and poppy seeds on one entire side of dough. Shake cornmeal over a pizza stone (or baking sheet) and place seasoned side of dough down on stone. Now brush the top with egg wash and sprinkle with more dried ingredients. Use a spoon to spread white sauce across, then place capers and onion on top.

 

You can actually either bake the onion and tomato onto the pizza, or have them fresh. Bake at 425 degrees for about 15-25 minutes depending on the oven. Remove from oven and add remaining fresh toppings.

Remove from oven and top with tomato and lox. I ate this pizza by myself. I did not stare at 24 Hour Fitness while doing this.

This is basically like combining two foods done brilliantly in New York: bagels and pizza.

 

They suck at chowder though. Have you ever had a go at Manhattan clam chowder? Blech.

  1. Yum. No, super yum. Bagel crust pizza! What a thing! Yes, I will be making this and eating it. Once I find a decent gluten free bagel recipe, I will be all over this. 🙂
