I like ooey gooey things. It dawned on me that I would never be able to stop eating cheese. Thank goodness for diets that allow you to eat some cheeses! If you aren’t on a diet, this is still your indulgent, ooey, gooey
I made pimento cheese, which just so happens to be keto and low carb. Being one to always try to outdo myself, I fried the cheese.

Ingredients for Fried Pimento Cheese KetoRecipe
Pimento cheese (Use this easy recipe. It’s keto/low carb!)
2 T heavy whipping cream
1 egg
3 T parmesan cheese crumbs + more for dredging
2 T ground flaxseed*
1 T almond flour*
Cooking oil for frying (tallow
, lard
, or coconut oil
if you are on the keto diet)
*If you are not on the keto diet, then simply use regular flour in place of flaxseed and almond flour
To begin your fried pimento cheese, make sure you’ll want some pimento cheese. I used my own recipe for this. Make sure your batch is cool and firm through refrigeration. Scoop 1 tablespoon of cold cheese and roll it into a ball between your palms. Freeze.
Process fresh parmesan into crumbs, enough for breading plus more. Combine almond flour, ground flaxseed meal, and parmesan cheese crumbs together. You can make this breading ahead of time, just make sure to store it in the fridge since it has cheese. Pour excess cheese crumbs into a second bowl. Whisk heavy whipping cream and eggs in a third separate bowl.
Remove pimento balls from freezer. Roll through parmesan crumbs. Dip into egg mixture, allowing excess egg to drip off. Roll through breading. Make sure it is completely coated in the crumbs.
Heat frying oil to 300 degrees (medium high). Place a few pimento balls in at a time, turning over if needed. Remove from heat once crumbs just begin to brown. Drain on paper towel and serve immediately.
