Texas Dr. Pepper and Whiskey Jello Shots

I have to say I am incredibly excited that it’s finally summer. This past winter sort of stole Spring’s mojo, so you can imagine how fidgety I’ve been to get outdoors.

 

I made my first attempt at wake surfing. Got up on the second try, yup.

Also, I won’t be letting the hot temps get in the way of my dancing. My friends and I country dance. When summer hits, we country dance on boats. Makes sense, right?

Okay, so maybe some of you don’t like to be flipped around, but that doesn’t mean you can’t find your own carefree way of enjoying summer. Get outside, enjoy the fresh air and feel like a kid again.

 

Here in Texas, we love being out on the lake, listening to country music and enjoying a little whiskey. Which is why I love making my  Dr. Pepper and Whiskey Jello Shots for boating. They have adorable Texas jello shapes inside, so everyone loves them.

 

If you don’t live in Texas, no worries, just pick a mold of your preference and modify for your crowd. It can be virtually any shape, so long as it fits in a shot glass.

 

I mixed whiskey and Cherry Dr. Pepper because that is a Texas favorite. Dr. Pepper reminds me of being a kid again, but the whiskey adds a kick of why being an adult is so great too.

Ingredients for Texas Dr. Pepper and Whiskey Jello Shots

For white layer

– 1/4 cup boiling water combined with 1/4 cup & 3 T sweetened condensed milk

– 1 1/4 teaspoons of unflavored gelatin + 2 T cold water

– 2 T hot water

 

For Dr. Pepper layer

1/4 cup whiskey

3/4 cup Dr. Pepper

1 envelope unflavored gelatin

 

Tools:

Texas shaped chocolate molds (or mold of your choice)

Clear plastic shot glasses

Wax paper

Vegetable spray

 

To begin your Dr. Pepper and Whiskey Jello Shots you want to make your white layer first. It’s the best part (aside from the liquor, of course)!

To make the white layer, in one bowl mix sweetened condensed milk with 1/4 cup boiling water. In a second bowl, sprinkle 1 1/4 teaspoons of unflavored gelatin over 2 T cold water. Let stand for a few minutes until gelatin dissolves and then add 2 T boiling water to dissolve the gelatin. Stir to combine well.

Add to the milk mixture to gelatin mixture and stir to combine. Cool to room temperature, but not solidifying just yet. Spray molds with vegetable spray. Use a paper towel to wipe up excess spray, as you want it coated but just slightly.

 

Spoon gelatin mixture into mold and place on a baking sheet. Place in fridge until totally firm.

 

Carefully wiggle a Texas (or shape of your choice) out of mold and press onto the side of a clear plastic shot glass. Sit down on its side in freezer, with gelatin shape sitting on bottom. Continue with the rest of shapes and freeze until rock hard.

 

Handle the shapes with care! They will be delicate and can break easily.

 

Once the Texas shapes are frozen in their cups, finish with the Dr. Pepper and whiskey jello shots portion.

 

Sprinkle an envelope of unflavored gelatin over 3/4 cup of Dr. Pepper in a sauce pan. Once gelatin foams up and absorbs the Dr. Pepper for a few minutes, heat on low to dissolve gelatin.

Remove from heat and cool. Add 1/4 cup of very cold whiskey and stir. Once mixture cools, but not yet gelatinized, spoon a little on top of Texas shapes that are now frozen onto cups.

Place back on sides in freezer, but with a piece of wax paper underneath. A little will spill out, but that’s okay. Try to cover most of Texas jello shapes.

 

Allow to freeze for a few minutes, then remove from freezer. Sit cups upright and fill with Dr. Pepper and whiskey jello. Place immediately in refrigerator until set.
