Chicken and Waffle Wings with Dr. Pepper BBQ Sauce

 

You know how out of control I can get with my recipes. Never a dull moment in my kitchen. With a lot of Dr. Pepper, and a little bit of trial and error I invented (I think? Who knows with the universe of the world wide web these days) chicken and waffle wings. Served with a side of Dr. Pepper Barbecue Sauce.

 

Yah I know it’s crazy. I like to live on the wild side. Really, though, this is the perfect Southern summer recipe. It provides the comfort of a chicken and waffle/BBQ meal, but portable and less heavy. Crazy, I tell yah.

 

I used a limited edition Dr. Pepper Cherry. You can find either Dr Pepper Cherry® or Dr Pepper Vanilla Float® limited edition flavors at Safeway and Albertsons.

Ingredients for Chicken and Waffle Wings with Dr. Pepper BBQ Sauce

 

For Wing Coating:

Flour
Paprika
Salt
Baking soda
Pepper

you will make a mixture of the above ingredients to coat wings in. Mix to taste. It should taste very salty and flavorful.
For Waffle Coating

1/3 cup all-purpose flour
1/8 cup cornstarch
1/4 teaspoon baking powder
1/8 teaspoon baking soda
1/4 teaspoon salt
2 T vegetable oil
1 small egg
1/2 teaspoon sugar
1/2 teaspoon vanilla extract
1/4 cup + 1 T cup whole milk

 

 

For Dr. Pepper BBQ sauce

2 Tablespoons unsalted butter
2 cloves garlic, minced
1/4 cup minced onion
1/4 cup ketchup
1/4 cup apple cider vinegar
1/8 cup light brown sugar
2 T Worcestershire sauce
1 Tablespoons tomato paste
1 teaspoons chipotle chili powder
1/2 teaspoon kosher salt
1/2 teaspoon ground white pepper
1 cup Dr. Pepper

Begin your chicken and waffle wings, make your Dr. Pepper barbecue sauce. Melt butter in saucepan on stove. Add onions and garlic. Once onions appear transparent, add the rest of your ingredients and stir. Simmer or set to low boil and allow sauce to sit, stirring occasionally, until it thickens into just a touch thinner than a barbecue sauce consistency.

While your Dr. Pepper barbecue sauce cooks, you can begin your chicken waffle wings. Pat chicken wings dry with a paper towel. Drudge (coat) wings in flour mixture. Flour mixture should be fairly salty and flavorful as the waffle batter does not offer the savory kick needed.

 

Combine waffle coating ingredients and set to the side.

 

Fry wings coated in the flour mixture (not waffle batter yet!). Heat vegetable oil to 350 degrees and place wings in oil. Once skin is crispy, remove and drain on paper towels.

Heat waffle iron to highest setting. Place wings in waffle coating and cover completely. Drip off excess, then place on waffle iron that has been sprayed with vegetable oil. Press iron down and allow to cook.

 

If sides of waffle batter on wings to not cook, place in hot oil again and fry for a few seconds to make chicken waffle wings crispier.  Drain and serve.

 

When barbecue sauce has boiled down, remove from heat and allow to cool before serving.

I like to top my chicken waffle wings with a touch of maple syrup, then dip in my Dr. Pepper barbecue sauce.

You can use this recipe for a really cute summer party table. Just serve with a pack of Dr. Pepper.

 

 

Tips on putting together the perfect summer/4th of July gathering with Dr Pepper® summer flavors (Dr Pepper Cherry® & Dr Pepper Vanilla Float®):

– Leave cans of Dr. Pepper out on a party table for guests to cool off with.
