Amazing fried pimento cheese recipe that is keto and low carb friendly. Southern food never looked so good!
  • Pimento cheese (You can use this: recipe)
  • 2 T heavy whipping cream
  • 1 egg
  • 3 T parmesan cheese crumbs,
  • 2 T ground flaxseed
  • 1 T almond flour
  1. Scoop 1 tablespoon of cold pimento cheese and roll it into a ball between your palms. Freeze.
  2. Process fresh parmesan into crumbs, enough for breading plus more. Combine almond flour, ground flaxseed meal, and parmesan cheese crumbs together. Pour excess cheese crumbs into a second bowl. Whisk heavy whipping cream and eggs in a third separate bowl.
  3. Remove pimento balls from freezer. Roll through parmesan crumbs. Dip into egg mixture, allowing excess egg to drip off. Roll through breading.
  4. Heat frying oil to 300 degrees (medium high). Place a few pimento balls in at a time, turning over if needed. Remove from heat once crumbs just begin to brown. Drain on paper towel and serve immediately.
