Gooey pimento grilled cheese sandwiches, with bacon, jalapeños, or tomato.
  • Pimento cheese
  • Bread (I used jalapeño cheddar)
  • Butter, softened
  • Optional: Sliced jalapeños, bacon, sliced tomato
  1. Spread butter on each piece of bread. Spread cold pimento cheese on other side. Top with any filling you like! I used sliced tomatoes, bacon, or sliced jalapeños. Place another slice of bread on top, buttered side up.
  2. Heat a pan to medium. Place sandwiches on pan surface. Cook until bottom is golden brown, then flip. Remove from heat once second side is golden brown as well.
