Refreshing alcoholic mojito popsicle diamond ring pops.
  • About 20 mint leaves
  • ½ cup water
  • ¼ cup sugar
  • 1 + ¼ cup white rum
  • ¾ cup flattened club soda
  • ¼ cup fresh lime juice
  1. Begin your mojito popsicle diamond ring pops by preparing your club soda. Pour into a glass and leave out until it is flat.
  2. Boil 1 cup of white rum. Set on high. Once it begins to boil, put timer on for two minutes. After two minutes are up remove from heat and pour into a bowl. A
  3. Next, you will prepare a simple syrup. Simmer water and sugar on low to dissolve sugar.
  4. Add mint leaves and bring to boil for about 2 minutes, then lower to simmer again for 5 min. Remove from heat and strain leaves.
  5. Once simple syrup is cooled, stir in cooled prepared rum, another ¼ cup of regular rum (that has not been boiled), flat club soda, and lime juice.
