  • ¾ lbs natural lamb boneless (for stew)
  • 2 tsp white wine vinegar
  • 1 T honey
  • 2 T olive oil
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp rosemary
  • ¾ lb Irish cheese, shredded
  • 1 bag of frozen french fries
  • 3 T butter
  • ½ cup sliced carrots
  • ⅓ cup diced onions
  • ¼ cup peas
  • ¼ T minced garlic
  • Additional salt, pepper, and rosemary
  • ½ stick of butter
  • 4 T flour
  • 1 teaspoon tomato paste
  • 2 teaspoon worchestire sauce
  • 2 cups beef stock

  2. At least one day prior, cube lamb. Toss in a plastic storage bag along with the white wine vinegar, honey, olive oil, salt, pepper, and rosemary. Seal and store in refrigerator.
  3. Shred cheese in a food processor.
  4. Cook french fries according to directions.
  5. Melt 2 T butter on medium heat and saute onions carrots and garlic. Add salt and pepper to taste, if your prefer.
  6. Melt 1 T butter on medium high heat. Add lamb and cook to brown outside. Season with salt, pepper, and more rosemary to taste.
  7. Leave pan after lamb uncleaned and lower heat to medium. Melt ½ stick of butter, the whisk in 4 T flour. Add beef stock, then whisk in tomato paste and worchestire sauce. Season with salt and pepper to taste. Turn up to med high and stir occasionally until it becomes a thin gravy.
  8. Top fries with shredded cheese and broil on low in oven. Top with everything and serve.
