Guinness popcorn is a great Saint Patrick's Day recipe. A light hint of beer, mixed into caramel popcorn. You can make this for Father's Day too!

  • Freshly popped popcorn (I use Kernel Season’sâ„¢ Premium Popping Corn)
  • ¼ cup corn syrup
  • ½ cup beer (I used Guinness) + 6 additional Tablespoons
  • 1 ¼ cup sugar
  • Dash of salt
  • ½ stick of butter
  • 1 teaspoon baking soda
  • Optional: nonpareils
  • Optional: Kernel Season’sâ„¢ Popcorn Seasonings (choose your favorite flavors)

  2. Combine all ingredients in a pot except for the 6 T beer, baking soda, and butter. Attach a cooking thermometer and heat on high until it reaches 300 degrees, known as the “hard crack” stage. The beer will cause your mixture to foam so make certain you use a large pot.
  3. Remove from heat and quickly add the butter, baking soda, and 6 T of beer. Stir until caramel is thick. Drop about 3-4 cups of popcorn into caramel and stir in. Use a slotted spoon to drain out excess caramel and then place popcorn on a piece of parchment paper sprayed with vegetable oil.
  4. If the caramel was not very thick, allow popcorn to dry a little, then recoat. The more coats you have, or the thicker the layers, the more pronounced the flavor of the beer will be. If your popcorn has a thin layer, you may not taste the beer as well.
  5. You can sprinkle on some nonpareils, or leave as is. Allow to dry and enjoy.
