Grilled Pimento Cheese Sandwich
So I took my pimento cheese recipe and did a bad thing.
Pimento is delish alone. The perfect cheese with spice and flavor.
But THEN I made it gooey, and carby (not a word) Buttery, and bacony (also not a word). Spicy, if that’s your thing.
Grilled pimento cheese sandwiches are the kind of sandwich you save for a rainy day. Eat it rolled up in a blanket and nap, so you can dream about more.
Ingredients for Grilled Pimento Cheese Sandwich
Pimento cheese (use this easy recipe)
Bread (I used jalapeño cheddar)
Butter, softened
Optional: Sliced jalapeños, bacon, sliced tomato
To begin your pimento cheese sandwiches, spread butter on each piece of bread. Spread cold pimento cheese on other side. Top with any filling you like! I used sliced tomatoes, bacon, or sliced jalapeños. Place another slice of bread on top, buttered side up.
Heat a pan to medium. Place sandwiches on pan surface. Cook until bottom is golden brown, then flip. Remove from heat once second side is golden brown as well.
If cheese in your pimento grilled cheese is not soft even after bread is golden brown, place a lid on top of pan to melt cheese more quickly.
If you don’t like a messy pimento grilled cheese, then keep a very watchful eye as the cheese can start to ooze out of the sandwich.
I don’t mind the mess. :*
